Title: Penang Pickled Garlic

Yield: 1 Pint

4 oz. fresh cloves garlic (about 1 cup) 1 1/2 c. rice vinegar 2 T. Homemade pickling spice.

Peal garlic and blanch for 30 minutes. Drain. In a shall enamel or stainless steel saucepan, combine vinegar and pickling spice and bring to a boiil. Pack garlic in 2 hot, scalded half pint jars. Pour hot liquid over garlic, leaving 1/2" headspace. Process for five minutes in boiling water bath. Refrigerate after openiing.
